GFP
Green fluorescent protein (GFP) is a protein composed of approximately 238 amino acids. It can be excited by blue to ultraviolet light, resulting in the emission of green fluorescence. GFP exhibits remarkable fluorescence stability, with a significantly higher resistance to photobleaching compared to fluorescein when exposed to excitation light. This property makes it an effective reactor for the concentration of tagatose. In the presence of tagatose, the fluorescence intensity of GFP increases with higher tagatose concentrations, leading to more pronounced fluorescence. The intensity of this fluorescence serves as a visual criterion for determining tagatose concentration.
